⌐◨-◨ Thanks for joining us for this special holiday edition of @Foodnouns Milk & Cookies show, a @thenounsquare SoapBox! Kichel Bow Tie Cookies INGREDIENTS Kichel Dough 190 grams all-purpose flour (1½ cups plus 1 Tablespoon) 2 teaspoons sugar ½ teaspoon baking powder ½ teaspoon salt 3 eggs, at room temperature 1 egg yolk, at room temperature 76 grams vegetable oil (⅓ cup plus 1 Tablespoon) 1½ teaspoon vanilla Sugar Coating 150 grams sugar, divided (¾ cup) In a small bowl, mix flour, 2 teaspoons sugar, baking powder, and salt. Set aside. In mixer with paddle attachment, combine eggs, egg yolk, oil and vanilla. Mix on low speed until fully combined, 30-60 seconds. With mixer on low speed, slowly add the dry ingredients in three stages until fully combined. You may have to stop to scrape down the sides of the bowl a few times. Continue beating for 15-20 minutes to develop the gluten, stopping every 5 minutes or so to scrape down the sides of the bowl. The dough will be very sticky. Cover the bowl with plastic wrap and allow the dough to rest for 30 minutes. Preheat oven to 350°F and line two baking sheets with parchment paper. Coconut Macaroons INGREDIENTS 1 14-oz bag sweetened flaked coconut, ⅞ cup sweetened condensed milk1 teaspoon vanilla extract 2 large eggs whites ¼ teaspoon salt 4 ounces semi-sweet chocolate INSTRUCTIONS Preheat the oven to 325°F. Set two oven racks near the center of the oven. Line two baking sheets with parchment paper. In a medium bowl, mix together the coconut, sweetened condensed milk and vanilla extract. Set aside. In the bowl of an electric mixer, beat the egg whites and salt until stiff peaks form. Use a large rubber spatula to fold the egg whites into the coconut mixture. Using a mini ice cream scoop or two spoons, form heaping tablespoons of the mixture into mounds on the prepared baking sheets, spacing about 1 inch apart. Bake for 23 to 25 minutes, rotating the pans from top to bottom and front to back, until the tops and edges are golden. Let cool on the pans for a few minutes, then transfer to a wire rack to cool completely. Dip in melted chocolate if desired. Let chocolate cool and harden.

Be sure to check out the recipe box in the @Foodnouns discord! ⌐◨-◨ Miami/Cuban Shortbread Cookies(Torticas de Morón) INGREDIENTS 1/4 cup unsalted butter softened 1/4 cup coconut oil solid 1/4 cup brown sugar 1 large egg yolk and white separated 1 cup flour 1/2 teaspoon baking powder 1 teaspoon lime juice 1 oz rum or 1 teaspoon rum extract 1/2 teaspoon lime zest Granulated sugar for sprinkling INSTRUCTIONS In a mixer or large bowl, cream together butter, solid coconut oil, and sugar until well combined. Add the egg yolk (save the egg white for the egg wash) and mix until well combined. Add the flour, baking powder, lime juice, and lime zest to the same bowl and mix until a dough forms. Transfer the dough to a work surface and shape it into a log. You may need to flour your hands so it's easier. Wrap the log in plastic wrap and chill for at least 2 hours or overnight. Don’t skip this step! Preheat oven to 350 degrees Line a baking sheet with parchment paper. Set aside. Remove logs from the fridge. Slice the log into 12 evenly thick cookies and place on the baking sheet. Brush the cookies with whisked egg white (egg wash and sprinkle with sugar. Bake the cookies for 15-20 minutes or until brown around the edges. Allow to cool completely before serving. Enjoy!

See this week’s recipes below and fine more in the recipe box in the Foodnouns discord. ⌐◨-◨ Twitter: @Foodnouns @NounishCookies Discord: https://discord.gg/foodnounsdao Apple Pie Filling INGREDIENTS: 2 teaspoons salt 10 McIntosh apples (about 3-½ pounds) 1 cup granulated sugar 2 teaspoons pure vanilla extract, divided ¼ teaspoon almond extract I prefer french style apple pie with Vanilla rather than cinnamon. If you are making pumpkin and already have that spice flavor profile, even more so. Mix together and fill your pie crust. Top with pie crust add an egg wash and some sugar and bake for about 40 minutes. Pie Crust INGREDIENTS 2 sticks (8 ounces) of unsalted butter, chilled 1/4 cup cold vodka 1/4 cup ice water 2 1/2 cups all-purpose flour 1 teaspoon salt 1 tablespoon granulated sugar (optional) INSTRUCTIONS—please see recipe box in Foodnouns discord.
